Preheat the oven to 200°. Peel the sweet potatoes and cut them into thick fries. Put them in a freezer bag with tomatoes, olive oil, paprika powder, chili and salt. Shake the bag and place the contents on a baking pan with baking paper and bake for 8 minutes in the oven or until they at soft but not falling apart.
In the meantime, blend the cottage cheese, unpack the tortillas and spread a thin layer of cottage cheese on two thirds of the tortilla. Take the stuffing out of the oven and add it to the tortillas, roll them together and put them in a greased baking dish. Place them close together, sprinkle with cheese and bake in the oven for 20 minutes. Serve with fresh coriander.
